Twice Baked Potatoes

Ingredients: (makes one potato)

1 medium potato
1/4 cup 1% milk
1 Tablespoon butter
1 Tablespoon sour cream
1/4 cup shredded sharp cheddar
Salt and pepper to taste

Directions:

Step 1. Bake potato in 375 degrees oven for 50-60 minutes or until you can stick a fork through it.
Step 2. Allow the potato to cool for about 5 minutes then peel skin off the top. Scoop out the flesh of the potato leaving the rest of the skin intact. Put the flesh into a bowl.
Step 3. Add the rest of the ingredients into the bowl with the flesh and mash or blend using a hand mixer until it reaches your desired consistency.
Step 4. Put the mixture back into the hollowed out potato skin.

Freezing and Reheating:

Wrap in saran warp then place in freezer.To reheat pull from freezer and put into a 425 degrees oven for 45 minutes or until center is hot.
